Cinco de Mayo

Cristi and Brooks put on a fabulous Cinco de Mayo fiesta last week. They required a latin article of clothing so Eva got to wear a little Peru beanie that looked so cute! I brought some homemade tortillas and a few of you asked for the recipe. This is from a friend from Mexico who taught me how to make them. Enjoy!


Flour Tortillas
3 cups flour
1/4 cup and 1 T oil
1 1/4 cup boiling water
1 tsp salt
Mix flour, salt and oil. Add water and stir. Knead 5 minutes. Make small balls and roll into 1/8 inch thick. Cook in a pan on med-high heat (no oil or butter needed). Turn tortilla when tiny bubbles form on the surface. Cook about a minute on second side. Makes 1 dozen small-medium size tortillas or 5-6 large burrito size tortillas.

My homemade tortillas rarely end up round. They're always some weird funky shape!
